General Comments
INVESTIGATION OF FIRE AT THIS LOCATION AT APPROXIMATELY 12:45 A.M. DISCUSSION WITH BOURBONNAIS FIRE DEPARTMENT INDICATED ROOF TOP FIRE IN AIR CONDITIONER. RESULT WAS SMOKE AND HAZE THROUGH ENTIRE STORE. STORE CURRENTLY CLOSED AND BEING STOCKED AT TIME OF EVENT.

ITEMS EXPOSED TO SMOKE OR SOOT MUST BE DESTROYED SINCE CHEMICALS IN SMOKE AND OTHER BY-PRODUCTS OF COMBUSTION ARE FREQUENTLY ABSORBED BY FOODS EVEN THROUGH OUTER PACKAGING MATERIALS. MANY INSOLUBLE TARS, PLASTIC BY-PRODUCTS, AND CHEMICAL COMPOUNDS FROM COMBUSTION CAN BECOME SUSPENDED IN SMOKE.

FOOD BECOMES ADULTERATED WHEN THESE COMPOUNDS ARE ABSORBED AND LODGED IN PACKAGING SEALS AND CREVICES THAT DO NOT TEND TO RECONDITIONING.

THE FOLLOWING MUST BE DESTROYED:
1. ALL FRESH PRODUCE, WRAPPED AND UNWRAPPED
2. ALL FOODS IN PAPER BAGS THAT DO NOT HAVE INTERIOR PLASTIC
OR LAMINATED LINER
3. ALL ALCOHOLIC BEVERAGES WHICH HAVE A CORK CLOSURE OR WOOD
BARREL
4. ALL DAIRY PRODUCTS BOTH FROZEN AND REFRIGERATED
5. NUTS (BOTH IN SHELL AND SHELLED) IN BURLAP OR PAPER BAGS,
SELF SERVICE CONTAINERS OR OPEN TO AIR.
6. EGGS, FRESH OR FROZEN
7. ALL MEAT AND POULTRY, FISH IN DELI AND ON DISPLAY
8. ALL CONTAINERS WITH A SCREW TYPE, CRIMPED, PRESS ON OR PULL
TAB CLOSURE. THESE INCLUDE ALL FOOD AND BEVERAGE ITEMS
SUCH AS MAYONNAISE, SOFT DRINKS, WINE AND SIMILAR ARTICLES
(NOT KEY TYPE OPENINGS SUCH AS CANNED HAM, SARDINES, ETC.)
9. INFANT FORMULAS AND RUBBER PLASTIC ITEMS WHICH ARE FOOD
CONTACT SURFACES, FOR EXAMPLE NIPPLES, PLASTIC BOTTLES,
PLATES, FLATWARE CUPS, ETC.
10. ALL FOOD ITEMS CONTAINED IN A LAMINATED OR FLEXIBLE
PLASTIC, CELLOPHANE OR SIMILAR CONTAINER
11. ALL DRUGS - CONTACT DIVISION OF FOODS, DRUGS AND DAIRIES -
KCHD WILL CONTACT IN MORNING AT OPEN OF BUSINESS

STORE IS TO REMAIN CLOSED AND MUST HAVE A REINSPECTION TO ASSURE DAMAGED FOODS HAVE BEEN REMOVED.

IF ANY DISAGREEMENT ON DESTROYING PRODUCT THEN THE STORE PRODUCTS ARE EMBARGOES UNTIL A DECISION FROM THE ILLINOIS DEPARTMENT OF PUBLIC HEALTH.
